Chorizo and Queso Fundido

  • Guerrero ® Flour Tortillas
  • 1 link chorizo, 3 to 6 ounces, chopped
  • 1/2 small onion. chopped
  • 3 cups Oaxaca cheese, grated
  • 2 Tbsp. brandy
  • Paprika
In a medium skillet, cook the chorizo and the onion; drain well. Turn the heat to low and add the grated cheese and brandy. Stir until melted and smooth. Sprinkle with paprika before serving with warm Guerrero ® Flour Tortillas.
You can use diced mushrooms instead of chorizo.
